Sweet Potato & Lentil Thai Curry Soup

This vibrant soup combines the natural sweetness of sweet potatoes with the earthy richness of lentils, all enveloped in a creamy coconut curry broth. It's a plant-based dish that's both nourishing and satisfying, perfect for our holistic wellness focus.

Ingredients:

  • 1 tablespoon coconut oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 2 tablespoons red curry paste

  • 2 medium sweet potatoes, peeled and cubed

  • 1 cup red lentils, rinsed

  • 4 cups vegetable broth

  • 1 can (14 oz) coconut milk

  • Salt and pepper to taste

  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large pot, heat coconut oil over medium heat. Add diced onion and sauté until translucent.

  2. Stir in minced garlic and grated ginger; cook for 1 minute until fragrant.

  3. Add red curry paste and cook for another minute, stirring constantly.

  4. Add sweet potatoes, red lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until sweet potatoes and lentils are tender.

  5. Stir in coconut milk, and season with salt and pepper. Simmer for an additional 5 minutes.

  6. Use an immersion blender to puree the soup to your desired consistency, or leave it chunky for more texture.

  7. Serve hot, garnished with fresh cilantro if desired.
